This cake is for a 90th birthday.
The man is a retired doctor.
He loves gardening.
The invitations were covered with dark green ferns and vines; natural and organic looking on ivory paper.
What's more organic than chocolate? After all it's made from the cacao bean, which is mostly grown in the forested areas +/- 10o from the equator.
The cakes underneath are raspberry sponge with whipped milk chocolate ganache, vanilla sponge with raspberry preserves, and chocolate with a dark chocolate ganache center.
They are all covered with whipped chocolate ganache, mixed with a bit of our home-made vanilla buttercream. (Vanilla, by the way, is the seed pod from an orchid plant, which grows -- more or less -- in the same region as the cacao tree.) Richly decadent -- a truffle-on-cake.
The fern details (piped in buttercream) and caduceus, a symbol of the American medical profession (made from fondant) reflect the hobby and professional interests of the honoree.
This was definitely a party you wanted to be invited to.
