Suzanne and I had lunch at Pie Lab in Greensboro today. Very cool place. Laid-back and comfortable. Good food. Interesting people. Fun. Definitely worth the trip to Greensboro. While you are there, visit the second hand store, the two hardware stores (especially Sledge's), the furniture/home furnishing store, and the library.
Pie Lab had several types of sweet and savory pies, we tried four and shared.
First we had quiche with sausage and peppers and mozzarella cheese. Kind of like an Italian sandwich, but pie. Pretty good.
Then taco pie. Ground beef, Rotel, refried beans and cheddar cheese. A bit messy but absolutely outstanding.
Then coconut cream pie. The flour-to-egg ratio was a bit high for me, but it was still very very good and we ate every last crumb.
Finally apple turnovers, which were like small fried apple pies, but they were baked. Great filling-to-crust ratio. The crust was flaky but held together. And there was not too much sugar in the fresh apple filling. Perfect!
So what's for lunch tomorrow at Mary's Cakes & Pastries?
Taco Pie, but we'll make the shell with corn tortillas, and use whole kidney and black beans instead of refried pintos.
Should be delicious.
